Chai Pear Cherry Marshmallows
- 1 1/2 tbsp unflavored gelatin
- 1/2 cup cold water
- 2 tbsp Chai Pear Shrub
Bloom the gelatin in a stand mixer.
Add the ingredients (below) to a sauce pan but DO NOT STIR. Attach a candy thermometer to the side of the sauce pan and heat to 247-250 degrees.
- 1/3 cup water
- 3/4 cups sugar
- Pinch of salt
- 2/3 cup light corn syrup
- 5 pitted black cherries
Carefully, transfer hot liquid to stand mixer.
Mix slowly at first and then on high for 10 full minutes.
Coat a spatula in oil or butter and empty the whipped marshmallows into a buttered 13x9 baking dish.
Let the marshmallows cure for 6-12 hours.
