Lemon Mint (Shrub) Pancakes

We followed @marthastewart's pancake recipe with a few modifications:

  • Half the sugar
  • Used Almond milk instead of cow's milk
  • Added lemon juice and lemon zest. 
  • Added our Lemon Mint Shrub to the maple syrup


  • 1 cup flour
  • 1 tbsp sugar (vs.2 tbsp)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 2 tbsp olive oil
  • 1 1/4 cups almond milk (vs. one cup regular milk)
  • Zest and juice from one lemon (not part of the original recipe)
  • Freshly chopped mint (to add to the pancakes while they are cooking)

Lemon Mint Maple Syrup:

Top with grated lemon zest, dollops of @fage Greek yogurt and a drizzle of lemon mint shrub maple.
