Rhubarb Jalapeno Creamsicle

This drink is absolutely delicious and is a perfect balance of sweet, spicy, sour and smoky. 

1oz Mezcal (@vidamezcal)
1oz Honeydew Jalapeno Element Shrub
1oz Homemade Rhubarb Simple Syrup*
1 egg white

*Mix equal parts sugar and water (1 cup of each) and bring to a boil. Add a cup of chopped rhubarb and let simmer for 10 minutes.

Add all ingredients to a shaker. Dry shake for 30 seconds. Add ice. Shake again until chilled. Strain into a coupe. Garnish with a "floating" jalapeno.
