Pineapple Turmeric Pancakes

This tropical and decadent twist will leave you (and your kids) smiling ear to ear wishing you were on lounging in the sun at the beach.

Paradise Pancakes:


1 1/2 cups flour
2 3/4 tsp baking powder
1 tsp salt
1 tbsp brown sugar
1 1/4 cups milk (we used 1%)
1 egg
2 tbsp melted butter
Dash of turmeric
1/8 tsp vanilla

Mix dry ingredients together and then incorporate wet ingredients into the bowl. Add the ingredients below. .

2 tbsp Pineapple Turmeric Element Shrub
1 tsp baking soda
For some reason we decided to add the shrub and baking soda after we mixed all of the above mostly so I could show and explain to my daughter how the vinegar (shrub) and baking soda react with each other.
Aside from the shrub, one other big difference between these pancakes and others we have made in the past (this is the decadent part) is that we cooked these in coconut oil instead of butter or olive oil because we thought it would pair well with the pineapple.

Toasted coconut
3 parts maple: 1 part Pineapple Turmeric Element Shrub
