THE TEA TOTALER

Ingredients:
2oz Earl Grey Tea

1oz Ginger Lime Element Shrub
1/4oz Rosemary Simple Syrup
1oz @odouls (non-alcoholic) Amber Beer Reduction*

Instructions:
Add all of the ingredients to a shaker. Shake with ice until thoroughly chilled. Strain into a coupe.

*we used @odoulsofficial amber (not the lager) which has a little more richness/caramel-y-ness to it. Technically, this has a trace amount of alcohol similar to kombucha so keep that in mind. To make this - all you need to do is pour the beer into a sauce pan and heat until the liquid has reduced by 50%. This helps concentrate the flavor.

This drink has a wonderful umami feel to it.

The earl grey tea provides an earthy, slightly bitter yet slightly sweet base to the drink. I always recommend over steeping tea if you are going to use it to make a drink.

The ginger lime shrub provides acidity, sweetness and that spicy burn you expect from fresh ginger.

The rosemary syrup balances the acidity of the shrub, complements the earthy notes of the earl grey and contrasts the spice of the 🌶 ginger.

The beer syrup. This is intentionally unsweetened so the goal here is to provide a concentrated bitterness to balance everything else in the drink. The unexpected surprise though was the frothy foam that resulted from shaking the drink giving it a silky, creamy mouthfeel.
